Brussel sprouts, carrots, and baby corn are 3 fresh vegies that travel very well and will last for up to 2 weeks out of the fridge when wrapped individually in newspaper and kept in a dry place in the shade (try a roller draw in your 4WD or camper). This dish can be cooked in a frypan on coals from an open fire or on your gas cooker.&lt;br /&gt;

An easy meal that can be cooked in a either a Camp Oven, Deep sided Frypan or large diameter Saucepan. Can be done quite quickly but I prefer it slow cooked if time permits. 
Canned vegetables can be substituted with fresh if available.
We pack any leftovers in snap sandwich bags &amp; store in Engel. Makes a hearty sandwich filling for a roadside lunch a day or so later down the track.

This is a great recipe given to us by vegetarian friends long ago. We are not vegetarian ourselves, but this recipe is a regular for us. It uses soy mince, which in this recipe we prefer to meat. It is tasty &amp; very easy to make &amp; has the advantage of needing no ingredients requiring refrigeration, useful when spending extended periods in the bush. It also freezes well.&lt;br /&gt;
