Description
This is a variation on the popular Fijian raw fish dish adjusted for camping. It's a very easy dish but needs to be prepared in the morning ready to serve chilled at night for dinner. Only use freshly caught fish as it is eaten raw (cured in lemon/lime juice).
Ingredients
Fresh raw fish fillets
1 cup lemon (or lime) juice
2 chopped tomatoes (fresh or tinned)
1/4 cup coconut cream
Method
Step 1
Mix lemon or lime juice, chopped tomatoes, & coconut cream together and set aside.
Step 2
Chop fish into bite size pieces (cubes)
Step 3
Combine fish and marinade together and place in a container that will fit into your fridge. Cover with a lid and leave marinade to "cook" the fish in the fridge for at least 6 hours.
Step 4
VARIATION: add capers & green peppercorns if you like a bit more zing!
Step 5
Serve chilled with a crunchy salad watching the sunset on the beach!
