Description
quick one pot dish
Ingredients
500g Linguine or other pasta
300g Tuna drained (unless in oil, keep the oil)
1-2 fresh Chillies or 1-2 t dried chilli flakes
2 cloves Garlic, crushed
1 x Lemon Rind & Juice
1/4 C Olive Oil (or less if tuna in oil)
2t Capers (optional) chopped
Parsley, as much as you like - we use heaps
Parmesan
Method
Step 1
Cook Linguine to your liking.
Step 2
Meanwhile fork up the Tuna and mix in Chilli, Garlic, Lemon, Oil & Capers (if desired).
Step 3
Drain pasta, reserving a couple of tablespoons of the water it's cooked in.
Step 4
Mix this water back into the pasta (keeps it slippery & stops it sticking). Add tuna mix.
Step 5
Mix thru parsley and top with parmesan.
Step 6
Serve with a fresh green salad & perhaps some garlic bread. Enjoy :)
