Layered Bean Dip

Description

Based on a tin and a fresh avocado this is a hearty dip that will fill the bellies of hungry travellers after a long day. Avocados travel well and can be bought hard and allowed to ripen while travelling. Best to wrap in newspaper and store in dark like a drawer.

Ingredients

  • tin refried beans
  • dash chilli powder or any spicy sauce
  • dash ground cumin
  • 1 cup grated cheese
  • 1/4 cup chopped pickled jalapenos (or green chillies)
  • 1 fresh avocado peeled and chopped
  • 1 fresh tomato - deseeded and chopped
  • 1/3 cup sour cream
  • 1/2 cup sliced black olives (from jar)
  • Optional: fresh shallots for garnish
  • Tortilla chips for dipping

Method

  • Step 1Drain jalapenos and olives
  • Step 2Chop/grate all fresh ingredients and set aside
  • Step 3Heat refried beans gently - add a little water to get a creamy dip-able consistency (1/4 cup). Optional: add 1 rasher of cooked bacon for added flavour
  • Step 4Mix chilli powder or sauce and cumin to taste. Heat until bubbly.
  • Step 5Spread hot bean mix over base of serving dish.
  • Step 6Immediately add grated cheese (it will melt a little, yum)
  • Step 7Layer on chopped jalapenos, chopped avocado, chopped tomato
  • Step 8Spoon on sour cream
  • Step 9Top with sliced black olives & chopped shallots
  • Step 10Serve with tortilla chips
