Description
Based on a tin and a fresh avocado this is a hearty dip that will fill the bellies of hungry travellers after a long day. Avocados travel well and can be bought hard and allowed to ripen while travelling. Best to wrap in newspaper and store in dark like a drawer.
Ingredients
tin refried beans
dash chilli powder or any spicy sauce
dash ground cumin
1 cup grated cheese
1/4 cup chopped pickled jalapenos (or green chillies)
1 fresh avocado peeled and chopped
1 fresh tomato - deseeded and chopped
1/3 cup sour cream
1/2 cup sliced black olives (from jar)
Optional: fresh shallots for garnish
Tortilla chips for dipping
Method
Step 1
Drain jalapenos and olives
Step 2
Chop/grate all fresh ingredients and set aside
Step 3
Heat refried beans gently - add a little water to get a creamy dip-able consistency (1/4 cup). Optional: add 1 rasher of cooked bacon for added flavour
Step 4
Mix chilli powder or sauce and cumin to taste. Heat until bubbly.
Step 5
Spread hot bean mix over base of serving dish.
Step 6
Immediately add grated cheese (it will melt a little, yum)
Step 7
Layer on chopped jalapenos, chopped avocado, chopped tomato
Step 8
Spoon on sour cream
Step 9
Top with sliced black olives & chopped shallots
Step 10
Serve with tortilla chips
