Slow baked onions or potatoes

Description

This is one for the campfire. Let the onions or potatoes cook overnight in the embers. Ready for breakfast in the morning.

Ingredients

  • Medium sized potatoes - one for each person
  • medium sized onions - one for each person
  • olive oil

Method

  • Step 1Make sure the potatoes are clean then rub olive oil into the skins. If you are cooking onions as well take off any loose outer layers and rub them with olive oil too.
  • Step 2Wrap each potato or onion separately in aluminium foil.
  • Step 3Scrape aside the ash etc from the dying camp fire then bury the potatoes or onions in the hot ash by piling it on top of them. They will cook overnight in the remaining heat and be ready in the morning. Serve with butter. They go well with bacon and eggs.
