This dish must be cooked in a camp oven as it relies on the retention of juices to keep the meatloaf moist.
Ingredients
- 500g lamb mince
- 3 tbspns semi-dried tomatoes from a jar
- 1 sachet of tomato paste (equivalent to 2 tbspns)
- 1 tbspn Gourmet Garden "Italian Herbs" (from tube)
- 1 tspn minced garlic
- 1/2 cup pine nuts
Method
- Step 1Prepare coal from an open fire (may take up to 60 minutes)
- Step 2Mix all ingredients together in a bowl
- Step 3Press into a small camp oven and seal with a lid
- Step 4Cook over coals from an open fire until cooked (will vary depending on size of your camp oven and heat of coals but approx 45 minutes).
