Description
Curried Chicken and Rice
Ingredients
½ cup chopped celery
½ cup chopped onion
¼ cup slivered almonds
2 tablespoons butter or margarine
¾ cup of rice
¼ cup raisins
1 teaspoon curry powder
2 teaspoons sweet chilli sauce
2 cups chicken stock
4 chicken thighs chopped (inch cubes)
Salt and Pepper to taste
Method
Step 1
In a heavy skillet or electric fry pan (not too hot), saute chopped chicken until lightly browned, remove and place in a container.
Step 2
In the same skillet cook celery, onion and almonds in butter until vegetables are transparent and almonds are slightly browned.
Step 3
Stir in rice, raisins and curry powder. Add chicken stock and bring to the boil. Cover and simmer 15 minutes over low heat.
Step 4
Add chicken and sweet chilli sauce, cover and continue to cook about 5 minutes more or until rice is tender and chicken is hot.
Step 5
Season to taste
