Satay Chicken cooked in a Camp Oven with the rice.
Ingredients
- 3 chicken breast fillets, sliced in strips.
- 1 brown onion, sliced into wedges
- 1/2 red capsicum, sliced
- 400ml coconut cream (I use trident as it does not separate during cooking)
- 1/2 cup crunchy peanut butter
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon Mae Ploy red curry paste, available from Asian food stores
- Rice: In Stainless steel bowl, 1 cup rice and 1 cup boiling water and place foil over it.
Method
- Step 1Stir all together in pot.
- Step 2Place a trivet over the Chicken and the rice bowl on top of the trivet. Camp oven lid on.
- Step 3Simmer until chicken is cooked, about 30 minutes.
- Step 4Do not get Camp Oven too hot! Better to add a few more coals under later than to burn it. Small amount of coals on top.
