Description

These scones are good cooked in a camp oven. But any oven will do.

Ingredients

  • 2 cups self-raising flour
  • large pinch mustard powder
  • 1/2 teaspoon baking powder
  • 2 table spoons butter or margarine
  • 200 g cheddar cheese, grated
  • 3 spring onions, trimmed and finely chopped1 large egg, beaten
  • 4 tablespoons milk

Method

  • Step 1Sift flour ,baking powder and mustard powder, into a bowl. Rub in the butter until it resembles fine breadcrumbs.
  • Step 2Add just over three-quarters of the cheese and the chopped spring onion, and mix well. Stir in the eggs and milk .The dough will be very soft. Knead very lightly on a well floured surface.
  • Step 3Pat out dough to about 2.5cm deep and place in round tin and sprinkle with the rest of the cheese. Bake for 20 - 25 minutes until golden brown and risen. Remove from camp oven and allow to cool..
  • Step 4Best served warm with butter or as I did with egg bacon and salad. as a meal.
