Description
This recipe is a twist on your typical fresh salsa for when you've been on the road a while and fresh produce is limited. Salsa is ideal to add interest and flavour to any steak, chops or just as a side dish.
Ingredients
1 sml tin corn kernels
1 sml tin chopped capsicum
1 sml tin chick peas
1/2 sml tin crushed pineapple
Dash lime juice (fresh or bottled)
Sugar to taste (1-2 tspns)
Optional: diced fresh vegies if available such as avocado, cherry tomatoes, red onion.
Method
Step 1
1. Drain liquid from tin ingredients
Step 2
2. Finely dice any fresh ingredients
Step 3
3. Combine all prepared ingredients in a bowl and mix gently to combine sugar and juice. Adjust to taste.
Step 4
Can be stored in an airtight container in fridge for a couple of days.
