Easy Mince & Brussel Sprouts

Description

Brussel sprouts, carrots, and baby corn are 3 fresh vegies that travel very well and will last for up to 2 weeks out of the fridge when wrapped individually in newspaper and kept in a dry place in the shade (try a roller draw in your 4WD or camper). This dish can be cooked in a frypan on coals from an open fire or on your gas cooker.

Ingredients

  • 600g mince (beef or lamb)
  • 1 large or 2 small fresh carrots
  • 10 - 12 fresh brussel sprouts
  • 1 tray fresh baby corn (approx 8 pieces)
  • 1 beef stock cube
  • 1/2 cup water
  • seasoning to taste

Method

  • Step 1If using an open fire, prepare coals (this may take an hour)
  • Step 2Take a shovel full of coals out of fire pit and bring to edge - create a flat area for your frypan to sit
  • Step 3Lightly sauté mince until browned in your frypan on the coals (adjust coals as required)
  • Step 4Remove pan from heat and add stock cube and water.
  • Step 5Return pan to coals and bring to a simmer (adjust coals as needed)
  • Step 6Add quarters of brussel sprouts (this ensure they cook quickly), sliced carrots and halved pieces of baby corn
  • Step 7Simmer for 5 minutes or until vegies are lightly cooked
  • Step 8Taste and season as you like
